Paul has a long history in the world of wine.

On May 4, 2018, he received at the French Embassy in Guatemala the maximum recognition of the services provided in the gastronomy and wine culture industry, he was awarded the decoration called: "Order of Agricultural Merit in the rank of Knight" granted by the Republic of France; It is important to mention that Paul's soul carries with him, in addition to his love for wines, the love of good cuisine; art that he also handles with great skill. To date, it offers special tastings open to the public and also private. In our CAVA he has written the tasting notes that describe, with all his experience, how special each bottle is; leading us by the hand towards the spirit of each one and their own poetry according to their "terroir", that land where the vine grows ... which will later be that wine that surrounded by the love with which it was conceived by each winegrower and winemaker, will come to you.   You will find that we will have the Insignia and Consent wines for the Sommelier, but we invite you to share with us what you want to discover in wine, and what makes your soul happy, recognizing your own tastes and identifying what you enjoy the most.
